Does Sanitize redact names in the text?

No. Metadata yes, body text no. Use Redact for words on the page.

Will it break a fillable form?

Removing JavaScript can break scripted forms. Flatten a completed form first if you only need the filled values.

It strips classes of active content. It is not an antivirus. Still treat unknown files with care.
